I don't know about you but I am ALWAYS in the mood for a muffin. And I just can't stop myself from making muffin recipes. This one turned out totally delicious and I've been having them as a late night snack almost daily since I made them.
Ingredients:
260g ripe bananas
1 tsp Vanilla
1/3 tsp kosher salt
40g brown sugar
20g white sugar
1.5 tsp baking powder
1 flax egg (1tbsp flax meal + 3tbsp water)
120g almond milk
60g almond butter
150g all purpose flour
130g whole wheat flour
80g dark chocolate
Start by making your flax egg and set aside to thicken. Mash your bananas and add sugar, salt, vanilla, almond milk and almond butter and combine well. Whisk in your flax egg. Add your flour and chopped dark chocolate and fold to combine until the flour is incorporated. Add to a muffin tray lined with parchment paper (fill almost to the top) and bake at 200 degrees C for 20 min.
