As my final recipe in partnership with Cocobella before I move away to Norway I decided to do something suitable for this time of year, so a chocolate packed Valentines dessert it is! This choc lava cake is incredibly easy to make but does in no way compromise on flavours. Ingredients 30g spelt flour
7g cocoa powder
20g granulated sugar
1/2tsp baking powder
35g vanilla coconut yoghurt
50g plant based milk
a pinch of kosher salt
one square (about 5g) of vegan chocolate
You will also need: an oven safe ramekin, 1tsp butter + 1tsp cocoa powder. Toppings: coconut yoghurt, berries and powdered sugar
Mix your flour, cocoa powder, sugar, salt and baking powder until well combined. Add the coconut yoghurt and plant based milk and stir until smooth. Grease the ramekin with butter and add the cocoa powder in. Tap and shake the ramekin to distribute the cocoa powder until it covers the entire inside of the ramekin. Pour the mix in (it should fill up no more than about 2/3-3/4 of the ramekin, use two separate ones if needed). Add a square of vegan chocolate to the middle of the batter, pressing it down until it's completely submerged. Bake at 200 degrees C for 20 minutes. Flip onto a plate and carefully jiggle the ramekin to slide the lava cake out. Serve with more coconut yoghurt, berries and powdered sugar. You can even coat your strawberries in some melted choc if you want to be extra fancy!
