Choc Chip Peanut Protein Cookies

The Lenny and Larry's cookies have surely taken the vegan market by storm several years ago, but as I've gotten more and more spoilt with vegan cookie options and also started baking my own cookies at home I got to thinking... why don't I just make my own protein cookies? And so I did. So please note that these are PROTEIN cookies, not the kind your grandma makes. They contain less butter and sugar than normal cookies and so they will have a different texture, somewhat similar to the well known Lenny and Larry's kind... but better in my opinion. Don't believe me? Try the recipe out and judge for yourself.

INGREDIENTS: 25g vegan butter

60g peanut butter

20g sugar

10ml flax seeds + 30ml water

25g Vanilla Protein Powder*

30g soy milk

A pinch of salt

30g whole wheat flour

30g all purpose flour

0.5 tsp baking soda

30g dark vegan chocolate

*I used the White Wolf vegan protein blend which is quite sweet. You can substitute this for a different kind or for more flour, but you might need to adjust the amount of sugar you add.

HOW TO:

Add your 10ml flax seeds and 30ml water to a bowl and stir to combine. Leave to set until it thickens. Mix your butter, peanut butter and sugar together in a bowl. Then stir in your soy milk and flax egg. Mix in your protein powder, salt and baking soda until completely combined. Then add your flours and stir carefully. Make sure not to over mix the flour. You might need to knead the dough lightly to incorporate all of your dry ingredients. Finally, chop your chocolate into chunks and fold it in. Divide the dough into 4-5 portions (depending on how big you want your cookies to be) and flatten them out on a tray lined with parchment paper. These won't spread in the oven so make sure to flatten them properly into round discs before baking.

Bake for 10 minutes in an oven preheated to 180C. Leave to cook for a few minutes on the tray before transferring to a wired rack and leave to cool completely. Enjoy!
