These delicious cherry pie flavoured waffles with added protein and wholemeal flour go great both as breakfast and dessert! This is pie season after all, so why not enjoy pie inspired dishes for all meals of the day?
Ingredients:
80g all purpose flour
60g wholemeal flour
30g vanilla protein powder
a pinch of flaky sea salt
1tsp baking powder
30g granulated sugar
10g vegan butter
265g soy milk
0.5tsp vanilla extract/1tsp vanilla sugar Cherry pie topping: 200g frozen sour cherries
0.5 tbsp corn starch
2tbsp granulated sugar
1tsp lemon juice
0.5tsp cinnamon To serve:
Vegan yoghurt or whipped cream
Maple syrup
Method: Whisk together your flours, protein powder, sugar, baking powder and salt. Melt the butter and mix with the soy milk and vanilla extract. Pour the wet mix into the dry and stir until combined. Preheat your waffle maker and lightly grease it with some oil or vegan butter before spooning in the batter. (How much batter you need will depend on the size of your waffle maker.) Cook until there is less/no steam coming from the waffle maker and/or you can open the waffle maker without the waffle splitting. If you feel the waffle sticking to the sides close the waffle maker again and cook for a few more minutes. Once done, remove the waffle from the waffle maker and repeat until you've used up all of the batter. While cooking the waffles, you can add all ingredients for the cherry pie topping into a saucepan and bring to a simmer while stirring. Simmer for at least 5 minutes or more, until it reaches your desired texture and you can't taste the corn starch any more. Serve the waffles with the cherry mixture, maple syrup and some yoghurt or whipped cream. Enjoy!
