Who can resist a skillet pancake first thing in the morning? This recipe perfectly combines my love for skillet pancakes with my love for the blueberry and cardamom flavour combo. This is the perfect cozy breakfast and I hope you give it a go. As always tag me @mealsbymiri if you do!
Ingredients:
40g spelt flour
10g vanilla protein powder
1tsp cardamom
1tsp baking powder
80g soy milk
40g blueberries
a pinch of salt
Method:
Mix baking powder, flour, protein powder and salt until well combined. Pour in the soy milk and mix. Fold in the blueberries and add to a well greased mini skillet. Bake at 200 degrees Celsius for 10-12 minutes until cooked through. Serve with maple syrup almond butter, blueberries and vanilla yoghurt. Enjoy!
