These bad boys are my new obsession. I cannot explain how incredibly delicious they are so I guess you'll have to try and make them and see for yourself!
Ingredients
Brownie layer: 130g almond butter
90g syrup
70g almond flour
15g cocoa powder
10g coconut flour
¼ tsp salt
Caramel:
200g sweetened condensed coconut milk (I used Natures Charm)
50g almond butter
15g coconut oil
¼ tsp salt
Additional:
200g vegan chocolate
How to make:
Mix all ingredients for the brownie layer until well combined and press into the bottom of a loaf pan lined with parchment paper. In a saucepan, add all ingredients for the caramel and stir together on low heat until everything is melted and well combined. Pour on top of the brownie base and leave in the freezer overnight. Take it out and slice with a hot knife (I run mine under warm water for a few seconds in between each cut). This makes the slicing process a lot easier as you avoid the caramel sticking to the knife as you try to get clean uniform slices. Place the bars back in the freezer evenly spaced out (not touching each other as the caramel will start sticking) while you melt your chocolate in a bowl over a pot of boiling water. To dip I like to place a single bar on a fork, lower it carefully into the chocolate and use a spoon to scoop and pour chocolate over the bar until evenly coated. Give the fork a few taps on the edge of the bowl to remove any excess chocolate and transfer the bar onto a parchment paper in the fridge. Leave it to set completely before serving.
