Caesar Salad

Late in 2019 I bought a caesar salad when out for dinner because I was sick of heavy foods and kinda just wanted to munch on some leaves. I suddenly discovered that I LOVE caesar salad and have been missing out for 23 years of my life?? I've now started making it at home on a semi-weekly basis so safe to say this damn salad I got was a life changer haha. Whether you love caesar salad or not, I highly recommend you give it another go with this recipe.

Croutons 100g Stale bread cut into cubes

1 tbsp olive oil

¼ tsp dried thyme

A large sprinkle of salt and pepper

How to: Toss all ingredients together and bake on a tray lined with parchment paper for 20 mins at 200C


Roasted Chickpeas

1 tin (240g) chickpeas

1tsp smoked paprika

1tsp garlic powder

A large sprinkle of salt and pepper

How to: Drain chickpeas, toss all ingredients together and bake on a tray lined with parchment paper for 20 mins at 200C


Dressing Enough for 2 salads

½ cup cashews (soaked overnight)

2 cloves garlic

½ cup water

1.5 tbsp capers

1tsp hp sauce

½ tbsp lemon juice

1.5 tsp smooth and mild dijon mustard

20 ml olive oil

2 tsp nutritional yeast

¼ tsp kosher salt

1 tsp white wine vinegar

How to:

Add all ingredients to a high speed blender and blend until super smooth and creamy. Transfer to a jar with a lid to keep it fresh in the fridge.

Salad

200g cos lettuce

60g cucumber

3 Cherry tomatoes

1 tbsp nutritional yeast How to:

Chop your lettuce, cucumber and tomatoes, add nutritional yeast, chickpeas, croutons and 1/2 of the dressing you made and toss to combine.
