Refreshing and comforting overnight oatmeal that taste like a blueberry pie thanks to the warm blueberry mixture on top that only requires 3 simple ingredients! Ingredients
40g oats
40g banana
120g unsweetened soy milk
7g chia seeds
Blueberry topping
50g frozen blueberries
1tsp cornstarch+1tsp water (and sugar if needed) Other toppings
1/2 kiwi
1tbsp coconut yoghurt
a handful of granola
Method Mash your banana and add to a jar with the oats, soy milk and chia seeds. Mix everything well and leave in the fridge overnight. Transfer to a bowl the next day. Add some frozen blueberries to a pot and bring to a simmer. Combine cornstarch and water and slowly drizzle into the blueberry mixture and stir until thickened. Add to the top of your oats and top with kiwi, granola and yoghurt.
