I do love my brownies, and like last year I figured valentines day season was the perfect excuse to drop a new one for you all. This year I figured I'd go with the killer combo that is Biscoff and chocolate, and so these Biscoff brownies were created. They're so delicious and backed with flavour. I hope you all love them as much as I do!
Ingredients:
80g dark vegan chocolate
80g vegan butter
3 tbsp ground flax seed + 8tbsp water
100g brown sugar
200g granulated sugar
1 shot of espresso (20ml)
65g cocoa powder
175g all purpose flour
½ tsp kosher salt
½ tsp baking powder
1tsp vanilla extract
60g almond milk
100g Biscoff spread
30g Biscoff cookies
Method:
Start by combining your flax meal and water and leave to rest for a few minutes. Melt your chocolate and butter in a bowl over a pot of boiling water. Whisk your flax mixture in with your sugars and gradually add your espresso, almond milk, salt, vanilla and chocolate + butter mixture.
Sift your cocoa powder, flour and baking powder into the wet mixture and fold together with a spatula.
Add the brownie batter into a square 20x20cm pan lined with baking paper. Place 100g Biscoff spread in the microwave for just a few seconds until it reaches a pourable consistency. Pour on top and swirl into the brownies with a spoon or knife. Sprinkle onn some crushed up Biscoff cookies and press into the brownie batter. Bake in a preheated oven at 200C for about 25-30 minutes until a knife comes out clean when piercing it.
Leave them to cool before serving.
