Quick, easy, but oh so fancy! We love a good make-ahead breakfast that also looks super impressive when assembled, don't we? This vegan breakfast parfait is super summery and refreshing and I hope you decide to give it a go!
Overnight oats: 30g quick oats
10g chia seeds
10g protein powder (I used BSC Clean Berry Coconut)*
30g banana
200g plant milk
Other add-ins:
Approx. 200g Coconut yoghurt (I used Cocobella mango)
Approx. ½ cup frozen blackberries
Berries and Chocolate for topping
Mix all ingredients for the overnight oats and leave to set for at least a few hours but ideally overnight. Thaw your frozen blackberries and lightly mash. Layer your overnight oats with the berries and coconut yoghurt in a jar/glass and top with more berries, chocolate or anything else you have on hand. Enjoy!
*If you want a substitution for the protein powder I would suggest adding maybe 10g frozen raspbperries for the berry flavour and using about 180g coconut milk instead of 200g plant milk
