As part of my Veganuary recipe-series today I'm trying to get better at posting the more basic recipes that I either never got around to or have significantly improved upon over the years. This french toast recipe is a new, improved and protein-powder free version that both my partner and I absolutely LOVE. I'm telling you, you're missing out if you don't give this one a go.
Ingredients: 15g chickpea flour
15g granulated sugar
1tsp nutritional yeast
a pinch black salt*
100g plant based milk
1tsp vanilla extract
2-4 slices of stale white bread
Blend all ingredients except from the bread until smooth, pour into a shallow dish. Heat a pan to medium heat and add some vegan butter. Once the butter has melted dip your slices of bread into the mixture until coated on both sides. Cook in the pan until golden on both sides and serve with some coconut yoghurt, fresh berries and maple syrup (or any other toppings you might want!)
*Black salt isn't essential but does provide the "eggy" flavour. You can sub with some regular salt if you don't have it though.
