I'm back with another delicious french toast recipe, this time featuring the beloved combination of peanut butter and banana! It's easy to make and such a great breakfast for when you have a little bit of extra time on a Saturday or Sunday morning. Ingredients:
15g chickpea flour
30g granulated sugar
a pinch black salt*
100g plant based milk
1 tsp vanilla extract
2-4 slices of stale white bread
*Black salt isn't essential but does provide the "eggy" flavour. You can sub with some regular salt if you don't have it though.
Filling: 1 Sliced banana
Crunchy Peanut butter
Toppings:
Chopped vegan chocolate
Maple syrup
Vegan whipped cream
Fried banana:
1 banana
1/2tbsp butter
2 tsp granulated sugar
Method: Blend all ingredients except from the bread until smooth, pour into a shallow dish. Heat a pan to medium heat and add some vegan butter. On both slices of bread, spread some peanut butter and to one side, add a sliced banana. Fold the other slice of bread over the one with chocolate to make a sandwich. Once the butter has melted, dip your sandwich into the french toast mixture until coated on both sides. Cook in the pan until golden on both sides.
To make the fried banana topping, peel and slice the banana in half both lengthwise and across, to make four equal pieces. Preheat a pan and add butter. Once the butter is melted, place the bananas into the pan with the sliced side facing up, and sprinkle on sugar evenly across the sliced side of each banana. Once the bottom of the bananas start to get golden, flip and cook until the sugared side is golden and crispy.
Slice the sandwich in two, and serve with your fried banana, whipped vegan cream, maple syrup and chocolate. Enjoy!
