Is this my favourite pancake recipe to date? Very possible. These bad bois are super fluffy, sweet, warming and fairly easy to make! I highly recommend adding the suggested toppings but if you decide to switch it up I would love to hear what toppings you choose and how it turned out! (Serves 1-2 people depending on how hungry you are and how many toppings you add)
Ingredients: 80g Spelt flour
20g Salted caramel protein powder
1tsp Cinnamon
0.5tsp Cardamom
1tsp Baking powder
A pinch of salt
70g Mashed banana
125g Plant milk
Cinnamon apple chunks: 1 Apple
1tsp Cinnamon
2tsp Sugar
A splash of water
A pinch of salt Suggested toppings: Almond butter, banana, strawberries, walnuts, maple syrup.
Cut your apple into cubes, add to a pot with the other ingredients and cook on medium heat while stirring occasionally until the apple chunks are tender. Add more water as needed to prevent them from burning.
To make the pancakes, start by mixing all ingredients apart from the banana and milk in a bowl. Then, mix the banana and milk well and add to the dry ingredients. Whisk until just combined. Spelt flour does have gluten in it but is more forgiving than all purpose flour in terms of over mixing, still I encourage you to be careful not to mix too heavily as that will prevent them from rising and getting as fluffy as we want them to be. Spoon in about 1 heaped tablespoon per pancake into a preheated pan on medium heat. Cook on both sides until fully cooked through. Top with your apples and the other suggested toppings and enjoy!
