Banana and Biscoff truly is a match made in heaven! These spelt pancakes were made with Biscoff protein powder and crushed Biscoff cookies for that sweet and warming flavour, and features mashed banana as an ingredient for added moisture and sweetness!
Ingredients:
100g spelt flour
20g Caramelised biscuit (Biscoff) protein powder (I used Macro Mike, you can sub for salted caramel protein and some extra cinnamon)
1/2tsp cinnamon
1tsp baking powder
A pinch of salt
70g ripe spotted banana
170g plant milk
3 Biscoff cookies
Toppings: Biscoff spread
Banana
Vanilla soy yoghurt
Method:
Mix spelt flour, protein powder, cinnamon, baking powder and salt in a bowl until well combined. Mash the banana with a fork and mix with plant milk. Pour the milk and banana mix into the dry mix and stir until just combined. Chop your biscoff cookies into small pieces and fold into the pancake batter. Cook a few spoonfuls of the mix per pancake in a non-stick pan at medium heat until it starts to set around the edges and/or bubbles start to form on top. Flip and cook until cooked all the way through. Repeat the process until you've used up all your batter. Stack the pancakes and top with yoghurt, banana and melted biscoff spread. Enjoy!
