I've been having a lot of fun with different french toast combinations lately. Now that it's fall, what better than to combine warm apples with this delightful breakfast classic? This vegan french toast sandwich is stuffed with golden, cinnamon-y and sweet apple chunks, and is perfect for a lazy fall morning when you want something extra tasty for breakfast. Hope you love it as much as I do!
Ingredients:
15g chickpea flour
30g granulated sugar
a pinch black salt*
100g plant based milk
1 tsp vanilla extract
2-4 slices of stale white bread
*Black salt isn't essential but does provide the "eggy" flavour. You can sub with some regular salt if you don't have it though.
Filling:
approx 1-2tsp vegan butter
Apple topping:
1 apple
½ tbsp vegan butter
½ tsp cinnamon
A pinch salt
½ tbsp granulated sugar
½ tbsp brown sugar
Toppings:
Maple syrup
Vegan whipped cream
Method: Blend all ingredients except from the bread until smooth, pour into a shallow dish. Heat a pan to medium heat and add some vegan butter. On both slices of bread, spread some vegan butter and add a most of the apple filling, make sure to set aside a little bit for garnish. Fold the other slice of bread over the one with chocolate to make an apple sandwich.
Once the butter has melted, dip your sandwich into the french toast mixture until coated on both sides. Cook until golden on both sides. Serve with some whipped cream and maple syrup, and enjoy!
