If you're in the northern hemisphere like me you're probably craving warm and comforting breakfasts this time of year. This all vegan apple skillet pancake will satisfy just this craving and is perfect for cold winter weekends!
Ingredients Cooked apple chunks 1 apple
1tbsp vegan butter
1/2tbsp granulated sugar
1/2tbsp brown sugar
1/4tsp cinnamon
Pancake batter
70g spelt flour
15g protein powder (I used a salted caramel flavour but you can use whatever you have on hand)
3/4tsp baking powder
1tsp cinnamon
150g soy milk
1/2tbsp melted vegan butter
2tsp sugar
Method Start by slicing the apples into small cubes and adding to a frying pan along with the sugars, butter and cinnamon. Cook over low-medium heat until golden and tender. Make the batter by whisking together flour, protein powder, baking powder, cinnamon and sugar in a bowl before pouring in soy milk and melted vegan butter. Mix to combine. Add 1/2 of the apple chunks to the batter and fold it in. Pour the batter into a mini skillet and bake for about 20 mins at 200C or until a toothpick inserted comes out clean. Top with the rest of the apple chunks, peanut butter, walnuts, maple syrup, blueberries or any other toppings you might like!
