Apple Baked Oats

Time for a cozy breakfast recipe! It's been a hot minute since I made some baked oats but my oh my were these delicious. The good thing about baked oats is that you can make extra and just keep the left overs in the fridge to reheat for a quick and easy snack later in the week! This recipe makes about 2 portions for me, but you can easily double/triple it for an easy meal prep as well. Either way I hope you enjoy!



Ingredients:

90g grated apple

100g quick oats

25g salted caramel protein powder*

15g chia seeds

200ml almond milk

1tsp cinnamon

1tsp cardamom

1tsp baking powder

a pinch of salt


Toppings: 1/2 apple

1tsp vegan butter

1/2 tbsp sugar

peanut butter

chopped almonds/granola



*Optional, can sub for a few spoonfuls of maple syrup or other sweetener of choice


Method:

Mix all ingredients together until well combined and bake in a 14x12cm ramekin/baking tin for 15 minutes at 200C. Meanwhile, dice 1/2 apple and fry in butter and sugar until golden and tender. Once the oats are finished cooking, add the cooked apple on top along with some peanut butter and chopped almonds or granola.
