Apple and Cinnamon Skillet Pancake

During fall I am never not craving warming meals with lots of cinnamon, nut butter and baked apples. And let me tell you this skillet pancake definitely hits the spot. Super fluffy, warming and comforting, and it's also fairly simple to make! If you don't have a mini skillet, feel free to use an oven safe ramekin or use a regular size skillet and multiply the recipe in order to fill it up. Just make sure to adjust the baking time accordingly to ensure it's baked all the way through! Ingredients: Apple topping:

1 apple

1tbsp maple syrup

1tbsp vegan butter

1/2tsp cinnamon


Pancake: 35g whole wheat flour

35g all purpose flour

15g protein powder (I used a salted caramel flavour but you can use whatever you have on hand)

1tbsp ground flax seeds

1/4tsp baking soda

1/2tsp baking powder

1tsp cinnamon

180g soy milk

1tsp apple cider vinegar

1tsp maple syrup (or more, depending on how sweet your protein powder and soy milk is)


Preheat your oven to 200 degrees C

Start by mixing the soy milk, maple syrup and apple cider vinegar. Set aside to curdle. In a bowl, add the rest of your ingredients and mix until thoroughly combined. Add the wet mix to the dry and then whisk until just combined. Add more maple syrup at this stage if necessary, it should be just a bit sweeter than you would like as it the pancake will get less sweet as it bakes. Lightly grease a mini skillet (approx 9cm in diameter), and pour in the mix until it almost reaches the top. (It will rise so don't overfill as that might cause it to overflow.) Place in the middle rack of the oven and bake for about 20 minutes or until a toothpick comes out clean. While you bake the pancake, dice your apple and add to a pan along with the rest of the ingredients. Fry on medium heat until golden, you can also add a splash of water as needed if you feel it is getting too dry. Once the apple chunks are tender and golden and your skillet is baked, simply assemble by adding the apple, some peanut butter, granola and maple syrup on top and enjoy!
