If you haven't been able to tell yet I've been totally obsessed with making protein bars lately and let me tell you, these were soo good!! If you don't have the protein powder I'm using in this recipe you can easily swap for another one or swap it for almond flour and just adjust the amount of almond butter/syrup if you need to get the right texture.
Ingredients: 30g crispy rice puffs
30g iced coffee protein powder (I used white wolf nutrition) 10g cacao
20g almond flour
70g almond butter
45g rice malt syrup
a pinch of salt
30g dark chocolate
Add all ingredients except from the dark chocolate in a bowl and mix until all combined. The mixture should stick together when you press it. If you think it feels too crumbly feel free to add more almond butter or syrup. Press into a small rectangular tin or container lined with parchment paper and leave in the fridge to set for about 1 hour. Melt your chocolate in a bowl over a pot of boiling water and pour on top of your bars. Leave to set before slicing and enjoy!
