(ad) Passion Fruit Panna Cotta

It's the time of year when I start craving all the fresh and fruity desserts, and what better than a passion fruit panna cotta to satisfy that craving? I've teamed up with my friends at Nature's Charm yet again and using their coconut whipping cream I've come up with a super delicious recipe for a panna cotta base that works so perfectly with the zesty delicious flavour of the passion fruit. I'm excited for you all to give this one a go and I can't wait to hear what you think about it!

Ingredients: Panna Cotta base:

1 can Nature's Charm Coconut Whipping Cream

0.5 tsp agar agar

1tsp vanilla extract

3tbsp sugar

2tbsp passion fruit pulp

Passion fruit topping:

100 g passion fruit pulp (approximately 5 passion fruits)

30g sugar

Method: Blend all ingredients for the panna cotta base in a blender. This is just to get the agar and passion fruit mixed in, no need to blend until the passion fruit seeds are fully crushed up. Strain the mix and pour into a saucepan and bring to a slight simmer while stirring gently. Add to a pot and simmer over low heat for 3 minutes. Strain the mixture into a container that’s easy to pour from. Let it cool for a few minutes before evenly distributing into ramekins or glasses. Leave to cool in fridge for a few hours. Add the passion fruit pulp and sugar to a pot and heat while stirring until the sugar is fully dissolved. Set aside and let it reach room temperature. Pour on top of the panna cottas once they have set and leave to cool in the fridge until serving. Enjoy!
