I do love a good whoopie pie, and I'm so excited for my first whoopie pie recipe to be in collaboration with Nature's Charm and their delicious caramel sauce! It's October which means I've clearly made these with Halloween in mind, and what better for halloween than a decadent chocolate-y treat? Ingredients
200g all purpose flour
40g cocoa powder
1/2 tsp baking powder
1/2tsp baking soda
80g sugar
100g brown sugar
1/8 tsp salt 100g vegan butter
200g soy milk
1 tbsp apple cider vinegar
Buttercream 120g vegan butter
350g powdered sugar
65g Nature's Charm coconut caramel sauce
To make the whoopie pies, mix the soy milk and apple cider vinegar and leave for a few minutes to curdle. Cream together butter and your sugars, add the milk mixture and mix completely. Sift in flour, cocoa powder, baking soda, salt and baking powder. Mix again until combined. Spoon about 1tbsp heaped batter per "cookie" onto a tray lined with parchment paper (space them out well as they will spread in the oven) and bake at 180C for approximately 12 min or until a toothpick comes out clean. Let them cool for a few minutes on the tray before transferring to a wire rack to cool completely. Use an electric beater to mix all the butter, powdered sugar and caramel sauce until you have a soft and fluffy buttercream. Add to a piping bag and pipe an even layer onto a "cookie". Place another "cookie" with approximately the same size on top to complete the whoopie pie. Repeat until you've run out of cookies. Enjoy your whoopie pies!
