These desserts are super fun and easy to make, not to mention very delicious! A great way to impress guests without having to put in too much effort. They're also perfect as a quick dessert to satisfy your sweet cravings when you don't feel like baking anything too complicated. I made this recipe in collaboration with Nature's Charm using their caramel sauce and coconut whipped cream!
Ingredients: (Makes 4 puff pastry rectangles)
2 sheets vegan puff pastry (or enough puff pastry to cut out 2 approximately 10x15cm rectangles)
2 bananas (medium ripe)
3-4tbsp Nature's Charm coconut caramel sauce 2tbsp melted vegan butter
2tbsp maple syrup
2tsp granulated sugar For garnish:
2tsp powdered sugar
grated chocolate
chopped walnuts
1 tin Nature's Charm coconut whipping cream
Method:
Place your puff pastry on the counter to thaw until it is cold but not “frozen”. For me this was about 10-15 minutes on the countertop, but it will depend on the temperature in your kitchen and the thickness of your puff pastry sheets. Slice the puff pastry into rectangles approximately 10x15cm. Then, score a rectangle into the puff pastry shapes about 1cm from the edges. Don't slice all the way through, this is just to allow the sides to rise and the filling to stay inside and not run out while baking. The squares should then look like a rectangle with another smaller rectangle scored/drawn inside of it. Then, inside the rectangle shape you have scored, spread on about 1-2 tsp coconut caramel sauce. Layer slices of banana on top to cover the caramel sauce. Mix the melted butter and maple syrup together. Brush this mix onto the sides of the puff pastry rectangle and sprinkle on some granulated sugar over the entire recangle. Repeat the process with all the puff pastry rectangles and place on a tray lined with parchment paper. Bake in a preheated oven at 200C for about 17 minutes or until golden brown. While this is baking, chop your walnuts, grate your chocolate and whip the Nature's Charm coconut whipping cream according to instructions on the tin. Let the desserts cool slightly before adding your toppings and enjoy!
