(ad) Apple Custard Parfaits

Apple crumble, custard and lots of festive spices. This parfait was made in collaboration with Nature's Charm and their delicious coconut custard, and is an easy but super delicious recipe that works just as well at a dinner party as for a laidback night at home! Cuddle up in front of the fireplace with one of these bad boys and you'll be feeling festive in no time.


Ingredients:

Caramel apple chunks

550 g whole apples/350g peeled and diced

1 tbsp cornstarch

0.5 tsp cinnamon

0.5 tsp cardamom

30g granulated sugar

30g brown sugar

20g dairy free butter


Crumble

50g oats

90g all purpose flour

50g granulated sugar

20g brown sugar

80g dairy free butter

0.5 tsp cloves

0.5tsp cardamom

0.5tsp cinnamon

0.25 tsp salt

40g walnuts

50g dried cranberries (after baking)


For layering:

1 tin Nature's Charm Coconut Custard


Method: Start by preheating your oven to 200 degrees Celsius. Peel and dice your apples and add to a bowl. Sprinkle in the rest of the ingredients and toss to combine. Add to an oven safe dish and place in the middle of the oven to bake. Bake for 30 minutes total, stirring half way, until the apple chunks are golden and tender. Remove the apple mix from the oven and leave it to cool. Make the crumble by chopping the walnuts and adding all ingredients except the cranberries to a bowl. Mix well until you have a crumbly mixture that somewhat resembles wet sand that can be pressed together easily. Spread onto a sheet lined with parchment paper and bake on the middle rack of the oven for up to 15 minutes. Add the crumble to a bowl and sprinkle in the cranberries. Mix. Let the apples and crumble cool until just slightly warm before layering with the custard. This should fill about 3-4 normal sized glasses.
