Valentine's day is fast approaching, and maybe you're looking for an edible gift for yourself or a loved one? These truffles are delicious and super pretty since they're covered in chopped pistachios! A delicious movie snack, small dessert or afternoon treat, these truffles are sure to make anyone happy this Valentine's season.
Ingredients:
200g 70% dark vegan chocolate
90g full fat coconut milk
1tbsp vegan butter A pinch of salt* *Omit the salt if using salted butter
Method:
Chop the dark chocolate and add it to a bowl with the butter. Place the bowl over a saucepan of simmering water and heat until melted, while stirring. Once everything is melted and combined, remove from the heat and add coconut milk. Stir again until combined. Place the bowl in the fridge until hard enough to scoop and shape. Chop pistachios. Scoop out a heaped tsp of the chocolate and roll into a ball, roll it in pistachios and set to cool. Repeat until you have used up all your truffle mixture. Chill in fridge until serving.
